The Stavromenos Agricultural Olive Oil Cooperative is located in the wider Sitia area, in the Lasithi regional unit of Crete, Greece.

The Cooperative was established in 1975 and currently has 199 members.

It owns and operates facilities in the village of Stavromenos, where an olive processing line is used for olive fruit crushing and olive oil production.

This processing line meets the needs of the Cooperative’s farmer-members and also serves producers from the surrounding area who are not members of the Cooperative.

Of the Cooperative’s members, 54 producers participated in the establishment of a Producer Organization for Table Olives, cultivating a total area of 2,123.4 stremmas (212.34 hectares).

More specifically, the Organization’s range of activities includes the following:

Olive Fruit Reception and Weighing – Receiving and weighing olives delivered by producers.

Olive Fruit Processing – Cleaning, washing, milling, malaxation and centrifugation to extract olive oil.

Olive Oil Production – Producing extra virgin, virgin or other categories of olive oil, depending on the quality of the final product.

Olive Oil Extraction Services – Providing olive processing and oil extraction services for a fee or other agreed compensation.

Olive Oil Separation and Delivery – Separating the extracted olive oil and delivering it to the producer.

Olive Oil Storage – Storing olive oil in suitable tanks under controlled conditions.

Olive Oil Filtration – Removing moisture and suspended particles where necessary.

Standardization and Bottling – Filling bottles or containers, packaging and labelling products, provided that the appropriate facilities are available.

Quality Control – Assessing key quality characteristics and, through a suitably equipped laboratory, checking chemical and organoleptic parameters.

All the above-mentioned activities of the Organization are supported by the Cooperative’s existing technical and logistical infrastructure, which includes:

• Cooperative Headquarters: Office premises covering 34 m².
• Olive Oil Mill: Processing facilities covering 155 m², with a processing capacity of 6 tonnes of olives per hour.
• Storage Facilities: Approximately 150 m² of storage space.
